The Restaurant Amarone is a genuine Italian restaurant. The chef is Italian from Bardolino, a small town on the west coast of Garda Lake, near Verona and the menu is typically northern Italian. All pastas are hand-made as well as bread and all desserts. Many products used here are imported from Italy such as Parmigiano Reggiano cheese, Prosciutto di Parma, Mascarpone cheese, Balsamic vinegar añejo, Cafe, Pellini, Colavita extra virgin olive oil, Mozzarella di bufala cheese and many wines, especially the Amarone.
A wide variety of Italian style aperitifs and cocktails (Martini and Campari based) are served here and is suggested having them on the terrace facing the best part of the Cabo San Lucas marina.Emperor Augustus had a favorite wine: the "Retico". Teodoricus, the great warrior grown-up at the Constantinople's court, expert in Greek and Mediterranean wines, was very fond of the "Acinatico"; this wine was described in its production techniques, especially the withering of grapes, by Teodoricus's minister Cassiodorus, and this technique has been the same for the last 15 centuries. From "Acinatico" comes the "Amarone", a unique wine. The vine that give grapes used to produce "Amarone" are cultivated only in the green hills surrounding the city of Verona, Italy.The name of our restaurant is a tribute to this great wine, and to the traditional cuisine of our city, which uses "Amarone" in many recepies, as a perfect match with the typical flavours: grilled red meat, lamb, braised beef and mature cheese. Nevertheless, the extraordinary concentration of the cherry and raspberry flavour, as well as the more delicate of raisins and spices, allow "Amarone" to create an original and fascinating combination with many other dishes.

“...even though being in a formative stage is one of its most evident characteristics, the cuisine -as such- of the Baja peninsula dates back to the 17th century, when the Mission of Loreto is founded in 1697... ...since the native population practically disappeared, especially in the southern part of the peninsula, its current population, over the last three centuries, has kept on arriving from different lands, with a gastronomic tradition that slowly, besides coexisting, has been assimilating to that of previous settlers...”
The above quote, taken from Señora Edith Jiménez-Moreno’s book on the Baja cuisine, aptly defines what you might expect in her restaurant: from traditional hand-made tortillas cooking in the open mesquite grill, where prime cuts of properly aged imported beef peacefully coexist with freshly-caught local pacific lobster and breasts of farm-grown chicken, to a classic Caesar’s salad, an international shrimp scampi, or an array of combinations that might include cheese-stuffed batter-fried poblano peppers garnished with fried plantains or sea-bass in a delicately tropical fresh mango sauce.
The setting is deserving of such fare: overlooking the bay and the rocks that mark the peninsular land’s end, surrounding an original construction made of woven desert shrub branches and adobe, dating back to the last century and now housing the well-stocked wine cellar, are intimate candle-lit terraces, both al fresco and under palm-thatched palapas, where the food, the view, the service and the atmosphere are enjoyed by those fortunate to be guests of Edith’s on any given evening.

Perched on the edge of land that divides the Sea of Cortez and the Pacific Ocean is the culinary jewel of Cabo San Lucas, Nick San has been shedding a new light of the definition of sushi since its opening, nine years ago. Owners Angel and Nick have combined skills to mesh all that is sacred in Japanese cuisine with local Mexican elements at their finest. The only thing fresher than a fish off the dock daily is fish that’s is hand-caught by the chef himself. Giving new meaning to the saying. “Location is everything”, Chef Angel has an advantage unlike most sushi chefs worldwide as he couples French and Japanese culinary expertise with fishing mastery, controlling all aspects of quality from the waters to the table.French technique is reflected in truly unique signature sauces with the use of local spices and produce.
Though wasabi and ginger are always available, many dishes present variations on these flavor elements of heat and pungent using traditional Mexican forms such as minced habanero and red onion, fresh fruits and herbs. You’ll see the local influence in the lobster roll, balanced with crunchy Lobster, Mango and Avocado. Large sea scallops are graced with lemon olive oil and thin slices of fried garlic. Oysters are marinated in sweet sake ponzu. Anything from delicate cilanto citrus sauce to Serrano chilies and spicy oils perfectly punctuate yellowtail and toro. With many insistent inquiries, some sauces are available for sale in quantity but secrets are never shared. It’s the unparallel freshness and global riffs on this Japanese art that set Nick San part from the rest.
Soft lighting, sleek white walls and a long hardwood bar create a calm, casual energy. One can come in from the beach or dress for a special occasion and feel comfortable.The decor is subtle, even minimalist, allowing the spotlight of elegance to be on the plate.
